The Baker
I started Inside Out Cookie on December 19th of 2021. My vision for this company has always been to give people the very best cookie they’ve ever had, while making a positive impact on the people around me, the people who work with me, and the entire community.
I'm not your typical baker. I learned to bake in prison. I spent my time away learning to bake, teaching baking skills to other inmates, growing myself and my core values, and turning an otherwise negative experience into something amazing.

The Problems
I don't only love to bake, I also love to eat! I've ordered cookies from every online company that I've ever heard of. Some are good, but most are bad. The ones with the best ads always seem to have the worst cookies.
I've paid up to 15 dollars each for a cookie, only to have a crushed stale disappointment arrive in the mail. I've waited up to two weeks for cookies to arrive. Insane levels of sugar and sweetness so much that a serial snacker like me can't even finish one. The thin plastic bags that I see so often folded over and taped shut do not keep food fresh. I've received cookies in a cardboard box filled with styrofoam peanuts. I see ingredient labels as long as my arm full of chemicals that sound scary and wondered what I'm really getting myself into. Most often, when an influencers tells me that a cookie is a "10 out of 10," it's more like a 1 out of 10.
I don't make promises that I can't keep, and I started this company to solve those problems.
The first cookie
The first Inside Out Cookie was a fortunate accident. While testing recipes I made a mistake on a dough recipe that ended up being delicious. What started as an overly wet dough, more similar to brownie batter, is now the foundation for every cookie we make. They're all perfectly round because they have to be baked in a ring. The result is a cookie that is chewy and soft without being doughy and underbaked.
The Ingredients
Cooking any kind of food for people involves trust. People have faith that a chef or a baker is making food that they can feel comfortable eating. As a baker, I'm telling the world that this cookie I made is good, I made it with care, and you can feel good about eating it.
I will never use ingredients that I wouldn't eat myself. I prepare everything that comes out of the bakery as though I were making it for my own family. If it doesn't meet my standards, it does not get sold to anyone. Period.
The package
If you notice that my cookie bags are hard to open, that's because they're extra thick, multi layered film made to keep cookies fresh. The bags are filled with nitrogen to stop freezer burn or bad flavors, and microscopically airtight so no funny business gets in, and no flavor gets out.
I designed my boxes specifically to hold cookies perfectly nestled between sheets of custom made padding to keep them safe during their journey to you. The box is crazy on the outside, and pretty on the inside. I always pack a fun little toy or two in each box with a hand-signed card, just a little something extra to make you smile.
Delivery
Me and the crew bake and ship five days a week so you don't have to wait your turn in line to get your cookies. When you order, we ship it the very next working day. We don't ship on the weekends because delivery trucks don't run on Sunday, the cookies would just be sitting around.
Moving Forward
I've been invited to appear on CBS five times, ABC and PBS once each, and several podcasts. I speak for groups in prisons, for state Parole and Probation Officers and criminal justice re-entry organizations. Giving back to the community is not just a marketing tool, it's my way of life.
